When I learned that the chef at Slamwich Kitchen in Madison had opened up a new restaurant in Flanders we jumped at the chance to see what chef Sam Freund had to offer in a restaurant setting. The combination of ingredients and strong service make White Birch a definite place to go. The meal started great with an excellent bread and even better homemade butter.
Leslie started with the onion tart and I had the Smoked Pork Belly with Maple, Lentils, Fennel and Pear as an appetizer. The main courses were excellent with Leslie enjoying a Double Bone In Pork Chop, celery root, asparagus and nectarine. I love the Duck sandwich at Slamwich so I had to have White Birch’s Duck Breast with pickled radish, beet root, duck confit and fava bean the Chef did not disappoint.
To top off the night the Chef took some time to come out of the kitchen to talk to us after our meal. He has added a patio for outside dining and a number of painting beds for local veggies and herbs and has a nice vision for this spot.
